Here are the       responses. Thank you all!       --              Good morning,              Sherryn F. asked for a recipe for soft molasses cookies. I immediately       thought of my Mother-in law and her lovely recipe for Spice Balls.              There is a trick to these cookies! The recipe makes crisp cookies. My       Mother-in-law made them lovely and soft by layering the baked and completely       cooled cookies in one of those big square Tupperware containers, putting a       quartered apple in the container (one quarter in each corner of the       container), then sealing up the container for a few days before eating ANY of       the cookies! The apple made the cookies soft and moist. When the apple       quarters shrivel and the cookies are nice and soft, just remove the apple - it       has done it's job. Be sure to keep the cookies airtight.              Here is her recipe:              SPICE BALLS              3/4 c. margarine, softened       1 c. sugar       1/4 c. dark molasses       1 egg       1/2 t. ground ginger       1/8 t. ground cloves       2 1/4 c. flour       1/4 t. baking soda       2 1/2 t. baking powder       1 t. ground cinnamon       1/4 t. salt        additional granulated sugar              Cream margarine. Add sugar & beat until fluffy. Add molasses and egg, beat       well. Add remaining ingredients gradually, mixing until smooth. Cover and       chill 2 hours.              Heat oven to 375 degrees F. Shape level teaspoons of dough into balls. Roll       in granulated sugar to coat evenly. Place balls 2" apart on greased cookie       sheets.              Bake 10-12 minutes. Cool on rack. Yield: 4 dozen              They will spread a little in the oven, making a nice dome-shaped cookie.              If you like them soft, and with a little more flavor, be sure to use the       quartered apple in an airtight container mentioned above.              Diane G.       Metamora, IL"                     From Carol T:       Soft molasses cookies              1 cup packed brown sugar       3/4 cup shortening       1/4 cup molasses       1 egg       2 1/4 cups Gold MedalCäó all-purpose flour 2 teaspoons baking soda       1 teaspoon ground cinnamon       1 teaspoon ground ginger       1/2 teaspoon ground cloves       1/4 teaspoon salt       3 tablespoons granulated sugar              1.Heat oven to 325+#F. In large bowl, beat brown sugar, shortening, molasses       and egg with electric mixer on medium speed, or mix with spoon. Stir in       remaining ingredients except granulated sugar. 2.Shape dough by rounded       tablespoonfuls into 1 1/2-inch balls. Dip tops into granulated sugar. On       ungreased cookie sheet, place balls, sugared sides up, about 2 inches apart.       3.Bake 13 to 16 minutes or just until set and cookies appear dry. Immediately       remove from cookie sheet to cooling rack.              --------------------------              --- BBBS/Li6 v4.10 Dada-1        * Origin: Prism bbs (1:261/38)    |
