   8. A Vintage Recipe

   This recipe was submitted in response to Jack M's request for crumb cake:   
      
   Janice from Delaware sent this, taken from a 1979 copy of the Pillsbury   
   Kitchens' Family Cookbook:   
      
   Crumb-topped Butter Cake   
   CAKE   
   2 cups flour   
   1 1/4 cups sugar   
   2 teaspoons baking powder   
   1/2 teaspoon salt   
   1/2 teaspoon soda   
   1/2 cup milk   
   1/2 cup softened margarine or butter 1 teaspoon vanilla   
   2 eggs   
   8 oz pkg cream cheese, softened   
      
   TOPPING   
   1/2 cup flour   
   1/2 cup firmly packed brown sugar   
   1/4 cup margarine or butter   
      
   Heat oven to 350 degrees. Grease (not oil) bottom only of 13/9 inch pan.  In   
   large bowl, blend all Cake ingredients at low speed until moistened.  Beat 3   
   minutes at medium speed.  Pour batter into propared pan.  In small bowl,   
   combine Topping ingredients until crumbly; sprinkle over batter.  Bake at 350   
   degrees for 30 to 35 minutes or until toothpick inserted in center comes out   
   clean. Serve warm or cooled.

   worries about such things as raw eggs, for example - so modern kitchen safety
