A Vintage Recipe       Be sure to check out our vintage recipe archive online at: http:       /www.tias.com/newsletter/topics/A%20Vintage%20Recipe.html       Over 1200 wonderful vintage recipes are listed.              Last week, Bev in Cottonwood, AZ requested a recipe for carrots made in a slow       cooker, in a sweetened sauce. We had two responses. We hope one of these       recipes is what you need!              This recipe is from Jill H. from Tuscon, AZ: Crock Pot Carrots       I don't really have a recipe, but here's what I do. I peel and cut about 2 lbs       of carrots into big chunks and put them in a bowl. I mix them with about 1/8       cup or so of light brown sugar, 2 Tbls melted butter, 2 Tbls honey and about       1/4 cup water (or sometimes I use apple juice or orange juice), and a little       sprinkle of salt and pepper. Mix it all, put it in a crockpot on low for 3-4       hours, maybe longer if they are really large chunks. They keep on the "warm"       setting for quite a while without getting mushy. Hope this is what Bev is       looking for!       --       This is from Debbie S:       Copper Carrots:       2 # carrots, sliced or baby carrots 1 can tomato soup, undiluted       1/4 cup sugar       1 medium onion, chopped       1 green pepper, chopped       3/4 cup cider or red wine vinegar       1/2 cup vegetable oil       1 tsp. Worchestershire sauce       1 tsp. salt       1 tsp. pepper       1 tsp. Dijon mustard              Place carrots in a saucepan, cover with water and bring to a boil. Cover and       simmer for 7 minutes or until tender. Drain. In a bowl, combine remaining       ingredients. Mix well. Stir in carrots. Cover and refrigerate 12 hours.       ---------------              10.
