Here's a recipe from a reader who says her family loves as a side dish:

   Zucchini, Peppers and Corn

2-3 fresh zucchini, sliced into 1/4" rounds 1-2 T butter
1/4 green pepper chopped into small pieces 1/4 red pepper chopped into small
   pieces 2 cups cooked corn
   Salt and pepper to taste
   Fresh chopped chives

Using a large skillet, lay the zucchini slices in melted butter, adding the
peppers and onion on top of the zucchini layer. Cook without stirring until
the zucchini is just lightly brown on one side. Give it all a quick stir
continue cooking for a minute or two until everything is just softening a bit.
Add corn, salt and pepper to taste, and some freshly chopped chives, toss
   until heated through, and serve.

Ratio of zucchini to corn can be changed depending on personal preference.

Great way to use leftover corn from a fresh corn roast!
