   Frances B. sent this in this recipe, saying it came from the 1983 edition of   
   Betty Crocker's cookbook:   
      
   Hoppin' John   
   1/2 pound dried black-eyed peas (about 1 cup) 3 1/2 cups water   
   1/4 pound slab bacon, lean salt port or smoked pork 1 onion, sliced   
   1/4 to 1/2 teaspoon very fined chopped fresh hot peppers   
    or 1/8 to 1/4 teaspoon crushed dried hot pepper   
   1/2 cup uncooked long grain rice   
   1 teaspoon salt   
   Pepper   
      
   Heat peas and water to boiling in 2-quart saucepan. Boil 2 minutes; removed   
   from heat.  Cover and let stand 1 hour.   
      
   Cut bacon into 8 pieces. Stir bacon, onions and hot pepper into peas.  Heat to   
   boiling; reduce heat.  Cover and simmer until peas are tender, 1 to 1 1/2   
   hours.   
      
   Stir in rice, salt and pepper. Cover and simmer, stirring occasionally, until   
   rice is tender, about 25 minutes.  Stir in additional water, if neccsary, to   
   cook rice.  6 to 8 servings.
