 Because the boiling point of a liquid declines with the pressure it is 
 exposed to. That's why pressure cookers work, the water will get hotter 
 than 100€C without turning into steam. 
  
 You also won't be able to cook yourself an egg on Mount Everest, since 
 the water will not get hot enough before evaporating.
