It takes the bartender longer to pour a beer than to pour a shot so I
usually go with the buck per drink no matter what it is - in places that I
don't frequent.
As for your regular hang-out with a bartender you see often, I've learned an
important lesson: outrageous over-tipping is well worth it. When the
bartender knows s/he's going to get a major tip the service improves
dramatically, more free drinks are offered and there's always space at the
bar for you.
