The old version of the Google Groups interface (which was replaced by the
current one just a few months ago) did display the e-mail address in the
"From:" header, just as a normal newsgroup provider does. I suspect
(althogh I don't know for sure, of course) that Google started hiding
addresses in the current version because this version now includes
user-created Google groups that don't propagate to other news servers (you
can access them only via Google's Web interface). Most Web-based forums
hide users' e-mail addresses, so Google probably figured that they'd
better do likewise, and since both kinds of groups use the same interface,
this would apply also to Usenet groups.
Of course, it's otherwise pointless for Google to disguise addresses in
Usenet groups, because normal newsreading software shows the addresses
anyway. So they probably do it only for consistency with their local
groups.
I think you make a very valid point, and you ought to tell Google about
