XPost: alt.food.asian From: Orchidguy@tampabay.rr.com Thai Curry Rat 6 rats cleaned and cut up 3 tbsp soy sauce marinate rat in soy sauce for about 1 hour sautee rat in hot oil till cooked For the curry 2 tbsp fresh galangal root minced 3 tbsp fresh lemon grass minced 3 cloves garlic minced 3-4 tbsp fish sauce fresh thai chilis...to taste and minced 1 1/2 cups coconut milk (unsweetened) small bunch of thai basil leaves coarsely chopped 2 tbsp cooking oil for the curry , saute galangal , lemongrass and garlic in oil, add the pre cooked rat or other meat and sautee for 1 or 2 minutes , add fish sauce and coconut milk and simmer till tender. at the last minute add the Thai basil leaves.
